I was wondering how easy it would be to create other blocks that pull quotes from other overseas stock exchanges such as the Australian or Japanese markets. I'm interested in having data pulled for various stocks around the world and was hoping to display them in seperate blocks rather than get the user to search for them?

Extremely easy. Just as I do in the Stock_Quote module, you add the exchange to the end of the symbol. So, if you were looking up Toshiba in Berlin you woul affix 'BE' to the end of the symbol -> TSBAa.BE
