guests can view, but only members can post?

is it possible to do this?

I'd like everyone to see the guestbooks, but only allow members to sign it. it is also possible to set it up so that the members name is automatically filled into the name field (uneditable)?

If you are using the Nuke version, then set this setting to true in user.prefs.php
$only_registered_users_can_add = true;

Then, in Nuke Admin Panel, set the module permissiona to All Visitors.
