Is there a way to add the new users IP to their registration request?

You can see it in the sentinel: /admin.php?op=ABTrackedUsersList

If you are fighting against spam, try to install nukeSPAM:

In sentinel I can see the users who submitted applications? How?

You had reposted the path in my answer, so use it. Your_Account shows you also the last used IP of each user. If you want control over the registration, so use the approval function.
